The grapes are harvested by hand in small crates, with low yields, sorted using a densimetric bath, then a second selection is made by size, to select the best berries. Alcoholic fermentation, malolactic fermentation and ageing in new barrels shape and refine this unique wine. Part of the blend is aged in cement tanks without sulfur, giving it exceptional balance and purity.
