Fermentation in thermo-regulated stainless-steel tanks. Ageing in used French oak casks for a minimum of 12 months. Well-balanced and silk like palate representing bold purple fruits, giving way to light touches gentle spices. Well paired with a mix of charcuterie, red meats and cheeses.
