Manual harvest at the end of September. Destemming, gentle pressing and settling. Fermentation at controlled temperature. Aging in 2 times: 6 months on fine lees then 6 months in stainless steel tank.
A wine to taste young to enjoy its freshness. As an aperitif accompanied by tapas, charcuterie platters, raclettes, creamy risottos and world cuisine.
