Night-time mechanical harvesting. Skin maceration for 6 hrs and pressing. Alcoholic fermentation from 13 to 15°C.
Colour: Sparkling with bluish reflections.
Nose: Powerful, evoking a field of flowers, with hints of iris, wisteria, lilac and jasmine, watermelon and pink grapefruit.
Palate: notes of cherry blossoms, exotic fruit, star fruit, passion fruit and grapefruit.
Food pairings: On its own, also enhancing rock lobster, smoked salmon or ceviche.
